Dr. Perricone recommends eating arugula raw and I have to say I wholeheartedly agree with him, though not based on health reasons.
Raw arugula tastes really good. It has a peppy, peppery zing that livens up salad mixes or tastes great if eaten as the sole green in a salad.
But besides tasting so yummy, it does offer a wealth of health benefits. Eating arugula raw preserves these benefits in the delicate green. Among the benefits:
- high contents of vitamin K, especially important in preserving bone density health, cardiovascular health, and preventing Alzheimer’s disease
- an abundance of chlorophyll, similar to red blood cells
Arugula also goes super well with pasta dishes. Whether you’re lounging with some penne a la vodka or eating super healthy, gluten-free veggie pasta, throw on some raw arugula. It compliments the flavors of many pasta dishes.
