Bon Appetit’s Spicy Pineapple Wedges

Bon Appetit’s Spicy Pineapple Wedges recipe was created by Chris Morocco, associate food editor: “I love to give tangy, sweet pineapple the Mexican-corn treatment by sprinkling it with salty Cotija cheese and dusting it with cayenne pepper.”

To make this the perfect fibromyalgia dish, just use gluten-free Cotija (or gluten-free feta, if preferred.) If you’ve never tried Cotija, it’s really delicious; salty, with an enticing texture. Now, salt does produce flares in some fibro patients, but often that’s because it’s salt found in pre-packaged, processed foods containing other questionable ingredients. If you follow a healthy diet keeping processed food to a minimum, the salt in Cotija shouldn’t cause issues. Healthy portions of salt are essential to good health.

Spicy Pineapple Wedges

  • Cut 1/2 pineapple lengthwise into 8 wedges and cut core from each wedge; remove skin, if desired. Dividing evenly, sprinkle pineapple with 1/4 cup crumbled Cotija or feta cheese and 1/8 teaspoon cayenne pepper.
