This recipe comes straight from the January 2012 issue of Martha Stewart Living. Her Vanilla Chia Seed Pudding contains chia seeds which offer an abundance of antioxidants, fiber, omega-3s and therefore…energy! Chia seeds are available at health food stores or online.
After making, you’ll have about 4 1/2 cups. Usually, a 1/2 cup to 1 cup is considered a bread serving, but you may want to check with a dietician. You can also add the berries to it, but you need to keep the serving amount of those in mind, too. It’s all healthy, but it also contains carbs.
