So, looking around the internet for something that is not only healthy but easy to cook—hence easy on the Fibro fog!—I found the following recipe on Dr. Oz’s site.
It’s called Curtis Stone’s Slow-Cooked Thai Chicken With Corn and Asparagus and it requires only one pot to make!
The recipe is dairy-free and full of Thai flavor. As far as the ingredients go, you can buy gluten-free fish sauce as well as gluten-free corn kernels and of course gluten-free coconut milk and almond milk are the norm, so what are you waiting for?!?
