Back in 2011, fitness expert and Oprah guru Bob Greene issued a 20 Years Younger Challenge.

Let me put down this whole cake to say, “La dee da!”

(I kid, I kid!)

The challenge may be formally over, but the recipes and advice still offer a world of good if you want to eat well while shedding weight and gaining nutrients.

A Ginger Salmon recipe from the challenge is still up on It’s very tasty and easy to prepare for as well as cook:

Servings: Serves 4


  • 4 salmon fillets
  • Extra-virgin olive oil
  • 1 Tbsp. fresh dill
  • 1 Tbsp. minced fresh ginger


  • Preheat oven to 350°.
  • Brush salmon fillets with extra-virgin olive oil on both sides. Sprinkle with fresh dill and ginger.
  • Bake salmon for 12 minutes.
  • Transfer salmon fillets to plates; serve hot.
