I’ve been running a lot lately, as well as stretching. To start my day off right before my mid-morning run, I make the following gluten-free breakfast panini that provides protein, the right amount of carbs, and nutrients. You will need:
- almond butter
- gluten-free raisin bread, loaf or roll
- 1 banana
- fresh figs or dried dates, your choice depending on taste and season. Adjust amount to size of bread
Heat oven to 350 degree. Spread a teaspoon of almond butter on each side of bread. Slice the banana in long, flat strips and cover one side of the almond butter covered bread with the bananas slices. Place the sliced fresh figs or the thinly sliced dates on the other piece of bread. Press the pieces of bread together hard.
Place the sandwich on the cookie sheet. Place a frying pan on top of the sandwich to make it like a panini. Cook until the bread is crispy; the inside, soft and hot.
(The other option is to use a panini maker to make this sandwich, but…I need to go shopping!)
