Do you like mushrooms?
Seems people either love or hate them; they’re not food items that people normally express ambivalent feelings about.
But no matter what you think of the tasty fungi (love ‘em!), they are full of Vitamin D and a good food to include in your diet.
If you can’t stand them, perhaps try sautéing them with garlic and olive oil or eating them raw in a delicious salad so you don’t notice them so much.
Or, here’s a wonderful recipe from Daily Beauty—a recipe that’s only 87 calories, full of Vitamin D, and super Fibro-fog friendly!
- Serves: Makes 4 (1/2-cup) servings
Ingredients: 3 tablespoons vegetable oil; 1 tablespoon Barbecue seasoning (like McCormick Grill Mates Barbecue Seasoning); 1 pound whole white mushrooms, stems trimmed, quartered
- Directions: Mix oil and seasoning in large bowl. Add mushrooms; toss until evenly coated. Place in perforated, metal grilling basket. (A large sheet of heavy-duty aluminum foil can be used in place of the metal grilling basket.)
- Grill over medium-high heat 10 minutes or until tender and evenly browned, stirring occasionally. Season with salt and pepper to taste, if desired.
